Coffee Story
Brewing Notes

The Sidama region is located in Southern Ethiopia, consisting of a larger land mass than Yirgacheffe, but not as widely known. Like Yirgacheffe, Sidama is known for high quality coffee production, with coffees that tend to lean towards crisp, lemon acidity and a great deal of clarity.

The Werka Washing Station is located just outside of the village of Nensbo and services 700-800 smallholder coffee farmers. Ripe cherries are fermented in water for up 48 hours before depulping. The coffee is then set to dry in a naturally windy location on raised beds. In addition to this washed process coffee, the Werka mill also produces high quality natural process coffees.

This is a beautiful, delicate coffee, and is best expressed with a Hario V60 or Kalita Wave at a 1:16 ratio of coffee to water.
