Finca San Jose De Las Nubes
When farmers Bayardo and Alvaro Reyes begin harvesting every season, they approach the process one lot at a time, picking and processing the ripe fruit separately to be blended together later on. A few years ago, we asked the Reyeses to taste the lots individually before blending them to see if any particular lot might produce a higher quality coffee. For three consecutive years, Sector 3 has stood out to us as the favorite. The differences are subtle and perhaps only noticeable to those who have cupped six harvests from Finca San Jose De Las Nubes, but we found Sector 3 to have more developed sugars and pronounced herby qualities than its neighboring lots. The remaining lots are blended to be used in our Handshake, Bear Trap, and Richmond Blends.
