MICROBIO WINES CASTILLA Y LEON White Correcaminos
MicroBio is a winery outside of Segovia, just a couple hours north of Madrid in the arid, high plateau region of Castilla y Léon. Ismael and his family own about 30 hectares (HA) of vines, some of the oldest ungrafted vines in the region. All are bush trained and grow in varying sandy soils. Most of the fruit is sold to prominent producers in the region, but he keeps 5 HA specifically for MicroBio. These 5 HA include his oldest, prephyloxera vines, nearly 200 years old. Ismael makes zero sulfur wines, unfined, unfiltered, with no additives. Correcaminos Blanco 2018 is fermented and aged in steel. After fermentation, it rests for 5 months on its lees (spent yeast).
