Chelchele

This offering from Chelchele is the first of many exceptional natural Ethiopian coffees we have sourced this season. These coffees hold a special place in many coffee drinkers' hearts. They have some very distinct flavor notes that lure people down the rabbit hole of specialty coffee.  

At the roastery we taste through new coffees almost daily, so we are very attuned to even the subtle differences that otherwise similar coffees may have. It takes time to be able to recognize flavor notes in coffee so it’s helpful to have coffees with more obvious flavor notes to help develop this skill. Natural Processed Ethiopian coffees are very helpful with this. These coffees are bursting with fruit tones from mixed berry flavors upfront, to delicate citrus and tealike flavors in the aftertaste. This is due to the way the coffee is dried with the cherry still intact. When the fruit dries around the seed (or bean) the fermentation brings about new, oftentimes more intense flavors. This processing combined with the distinct flavors of Ethiopian varieties lends to a cup with upfront notes of Blueberry and Baked Apple, bookended with notes of Cacao Nib.
