Coffee Story
Tolima is a region of Colombia that we as a company have not done much work in. The desire was there, but we just were not making connections. That’s why I got so excited when I was talking to Sal Persico at Collaborative Coffee Source and he mentioned he had this beautiful coffee out of Tolima that he wanted us to try. That coffee belonged to, Jhon Edison Molano, who sold his motorcycle in 2007 to buy his farm. It is located at 1900masl and is producing Caturra, Castillo, and Colombia Varieties. This coffee is washed and dry fermented for 35-40 hours.

The flavor profile on this cup is familiar and refined. Its fruit notes are soft and fresh with a medium body. The finish is sweet and leaves a light caramel note lingering long after your last sip.
