Finca San Isidro Anaerobic Honey
We couldn’t be more excited to welcome coffees from Katia Duke’s San Isidro estate in Copan Ruinas, Honduras again this year. It is always a pleasure to see the San Isidro logo on bags in the roastery, and this year our first bags of San Isidro are extra special. Always eager to innovate and experiment, Katia and her team at San Isidro attempted some especially challenging new anaerobic processes with their 2020/2021 harvest. Our two favorites were her 72 hour anaerobic fermentations. Both processes beautifully elevate and highlight the qualities of her coffees. This 72 hour Anaerobic Honey presents its dark, sugary fruit flavors and herby finish its exceptional body and balance.
