This coffee comes to us through Yolima Taborda Rojas of Paisa Coffee. Yolima's company is focused on importing coffees from small farms in Colombia, many of which are owned and operated by members of her family.
Yolima is based in the Washington, DC area so its easy for us to meet with her to cup the coffees she has brought into the US each season. This year, the Washed Process coffee from Finca La Leona was a clear stand-out on the table with a super-savory character and notes of white raisin and butterscotch, but still finishing clean with a ripe plum acidity.
Finca La Leona has been in operation for over 30 years with a focus on environmental sustainability, carrying Rainforest Alliance and 4C certifications, and maintaining biodiversity through crop integration with various food crops like corn, beans, plantains, and other fruits. Dedication to sustainability and quality has earned farm owner Afranio Enciso Suárez a reputation for producing exceptional coffees, placing 8th in Colombia's Cup of Excellence competition in 2015.
The Colombia La leona is an exceptionally drinkable coffee no matter what brew method is used. Automatic drip coffee makers work well with this coffee, while hand pour methods like Hario V60, Chemex, and Kalita Wave will bring out even more complexity of flavor.
