This is our first season working with coffee from Bare, located just a short drive from Demeka Becha, where our sourcing partners have maintained a relationship with the family and surrounding community since 2019. Despite their close proximity, the two sites have distinct microclimates and coffee varieties, resulting in unique expressions of the region.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis lot is processed using a Black Honey method, beginning with carefully selected ripe cherries that are sorted by hand and density before being pulped. Rather than washing away the sticky fruit mucilage entirely, a generous layer is left clinging to the parchment through a short fermentation before the coffee is moved to shaded drying beds. This approach requires careful attention during drying but produces a distinctive cup, with concentrated sweetness, warming spice, and botanical character alongside a more pronounced fruit expression than other honey processes.
