The Ethiopia Chelchele is a product of cooperative washing station of the Chelchele village of the Kochere district in Yirgacheffe, Ethiopia. Coffees from this region are know for sweet complexity, and intense floral and citrus notes.
The Natural Process Chelchele displays a delicate complexity with a soft, sweet, herbal quality, soft stone fruit and citrus notes, and a crisp, tart, raspberry finish.
Until recently, micro-lots from small washing stations like Chelchele were heavily regulated and required to be sold through the Ethiopian Coffee Exchange, often clouding any transparency where coffees originated. Now, smaller cooperatives are able to sell micro-lots directly to importers and roasters, adding transparency, and often improving profitability for small holder farmers.
Fruit-forward coffees like this Ethiopian are best brewed with filter hand pour methods like Hario V60 or Kalita Wave.
