Located in the small town of Salento, Colombia, Finca El Ocaso produces an environmentally sustainable coffee, inhabited by micro-fauna and flora creating its special fragrance, aroma, and flavor, highlighting a unique acidity and body. El Ocaso has been in the Patino family for decades and headed by Gustavo Alberto Patino since 1982.

Gustavo focuses his efforts on maintaining an environmentally and socially sustainable operation by running an organic process and keeping to the traditional methods of hand-sorting the top quality beans, providing jobs to many of the locals.

Bright, complex coffees like Finca El Ocaso are best brewed with filter hand pour methods like Hario V60 or Kalita Wave.

One of the most exciting aspects of close partnerships between growers and roasters is the ability to experiment with harvesting and processing techniques to develop new and exciting coffees from a single farm. El Ocaso, like most farms in the region, produces primarily washed process coffees. In order to experiment with alternative processing methods, we funded the construction of two drying bed houses on the farm, and hired farm owner Gustavo’s son, Santiago, to manage our processing experiments at the farm level. One of the results of this experimentation is this year’s special release of a full Natural Process El Ocaso. The dry, natural process creates deep, rich, fruit flavors while accenting the typical Colombian coffee flavors of chocolate and brown sugar. Special offerings like this wouldn’t be possible without a trusting relationship between grower, importer, and roaster.
