Daniel Velasquez at Campesino Coffee is our go to guy for exotic new Colombian coffees, but it has been a few years since we’ve had the pleasure of finding a new variety from Santiago and Gustavo Patino at El Ocaso. This year we were sent samples of Yellow Tabi, a cousin of the Red Tabi 18:18. It came as no surprise that Santiago produce a coffee so delicate and sweet or that we would be as immediately enamored with it as we have been with the other coffees in their line up. The Yellow Tabi presents the malic acidity characteristic of its neighboring trees at Ocaso as a perfectly balanced apple brandy with a splash of dry sherry.
