Over the past several years, the La Palma & El Tucan Estate of Colombia has established itself as one of the most innovative specialty coffee producers in the world. Due to the quality and consistency of the coffees they produce, La Palma & El Tucan has gained a reputation as an industry leader, with some of the most sought-after coffees on the specialty market.

Recognizing the opportunity to lift up surrounding producer communities by leaning on their own expertise and success, La Palma & El Tucan owners, Elisa and Felipe Mandriñan developed the Neighbors and Crops program which invests in smaller neighboring producers in order to increase quality and consistency of each farm’s coffee. La Palma & El Tucan is able to use their considerable marketing power to increase market visibility of the participating farmers, exposing their exceptional coffees to a broader audience of specialty buyers.

Neighbors and Crops participant, La Dagua, is a 14 hectare estate owned and operated by Helber Jimenez. At 1650 meters above sea level, the farm is ideal for cultivation of its primary crop, Castillo variety coffee. La Palma staff aided Jimenez in harvesting the season’s coffee cherry which was then processed using the Lactic Fermentation processing method popularized at the La Palma & El Tucan estate, followed by 15 or more days of drying. This process yields a beautifully complex, floral, soft, and sweet cup reminiscent of poached pear and sweet chamomile.


This is a beautiful, delicate coffee, and is best expressed with a Hario V60 or Kalita Wave at a 1:16 ratio of coffee to water.
