Grown in the renowned coffee region of Santa Barbara, Honduras, this Catimor variety is a great example of what happens when experience and care come together in coffee farming. Santa Barbara is known for producing some of the country’s most distinctive coffees, thanks to its unique microclimate and dedicated farming communities. Isaias Fernandez has been growing coffee for years, and it shows in the way he approaches each step of the process—from picking ripe cherries to carefully drying them.  

In the cup, it’s smooth and refreshing, with an easy-drinking profile that still keeps things interesting. You’ll catch notes of ripe plum, a hint of iced tea, and a soft floral finish that reminds us of honeysuckle. It’s the kind of coffee you can enjoy every day, but still pause to appreciate for its balance and subtle complexity.
