Chire
In the past year, we have purchased more coffees from Sidamo than any other region in Ethiopia. They have the bright burst of fruit we love while still having comforting base notes of chocolate. In years past we have focused more on Yirgacheffe so it's been a nice change to explore the range of Sidamo.
Chire lies deep in Sidamo about an hour past Bensa (a community we purchased 4 coffees from this year!). This remote community maintains a lot of ancient Sidamo traditions from the housing structures they live in to the daily community gatherings. Since coffee is native to these lands, it has a forest-protective effect and is more sustainable than some of the other crops they grow. The coffee from Chire is the full package starting with the aroma of hibiscus and dried blueberries, followed by the fruit-forward acidity that leads right into a creamy vanilla texture and finishes with the slight dryness of cocoa powder.
