El Mirador Pink Bourbon

Perched in the hills outside Acevedo, Finca El Mirador is an eight-hectare farm run by fourth-generation producer Miller Bustos, who has spent the last 30 years caring for land passed down through his family. What was once used for sugar cane and livestock is now fully planted in specialty coffee, including this Pink Bourbon. Grown at nearly 1,500 meters above sea level, the farm’s cool nights and bright days help slow cherry development, building the sweetness and clarity that show up so clearly in the cup.

This lot is naturally processed, allowing the coffee to dry inside the fruit and take on a deeper, more layered sweetness. In the cup, that translates to ripe strawberry notes and a juicy, green grape acidity that keeps everything feeling fresh and lively. Pink Bourbon’s unique genetic background, with ties to Ethiopian landraces, gives it an especially expressive profile, and producers around Acevedo like Miller have embraced it for exactly that reason.
