Idido
Grown in the highlands of Ethiopia’s Yirgacheffe region, this washed lot from the village of Idido is a quintessential expression of Ethiopian coffee. Idido is one of the oldest coffee regions in the world and sits at high elevations with rich soil and ideal microclimates, producing coffees celebrated for their clarity, florality, and vibrancy.
This lot was meticulously handpicked and processed using the traditional washed method. After harvesting, ripe cherries were de-pulped and fermented under water to break down the mucilage, then carefully washed and dried on raised beds under the sun. The result is a remarkably clean cup that highlights the classic character of the region with striking clarity and nuance.
Expect a delicate yet dynamic profile with bright citrus, stone fruit, and jasmine aromatics that come together with a silky body and crisp, tea-like finish.
