Bare
Bare is a coffee-producing site in the Bona Zuria district of Sidama, Ethiopia, owned and managed by the Tulu family. This is our first season working with coffee from Bare, located just a short drive from Demeka Becha, where our sourcing partners have maintained a relationship with the family and surrounding community since 2019. Despite their close proximity, the two sites have distinct microclimates and coffee varieties, resulting in unique expressions of the region.
This lot is processed using a Black Honey method, beginning with carefully selected ripe cherries that are sorted by hand and density before being pulped. Rather than washing away the sticky fruit mucilage entirely, a generous layer is left clinging to the parchment through a short fermentation before the coffee is moved to shaded drying beds. This approach requires careful attention during drying but produces a distinctive cup, with concentrated sweetness, warming spice, and botanical character alongside a more pronounced fruit expression than other honey processes. It's an exciting addition to our Ethiopian offerings and a great example of the range of flavors coming from Sidama.
