Colombia, as a coffee origin, is the country we purchase the most single origin coffees from. We don’t necessarily do this on purpose, rather it happens because there is so much diversity in the flavor profiles of the coffees that grow there. Colombia’s coffee industry is known for embracing innovation and promoting quality in the final product.
Faber Pacheco and his father have worked the past 15 years planting different rare varieties on Finca Javier. We had the good fortune to taste some of them, but it was the more common Caturra that really shined for us. This coffee ties together innovation and tradition by upfront notes of red fruit like cranberry, while still having some deep chocolate sweetness finished with the complexity of spices like cinnamon.
