Udesa Fora

From the forests of Sukke Chiga in Ethiopia’s Kercha District comes a washed Guji that highlights the clarity and vibrancy of this region. Udesa Fora takes its name from the idea of resting under a tree, a nod to the shade grown environment that shapes the character of the coffees produced here. The station is managed by Mekonnen Beriso and brings together the work of about three hundred to four hundred farmers who grow the heirloom varieties 74112 and 74158 at elevations reaching up to two thousand one hundred meters.

Cherries are carefully sorted before they are depulped and placed into a 72 hour fermentation. After washing, the coffee dries for 8-12 depending on the weather. The combination of altitude, cool evenings, and filtered sunlight encourages slow and even development of the cherries, creating depth and sweetness in the final cup.

The aroma carries a bright fruit presence that leads into a cup with clear structure and layered flavor. Expect a lively range of citrus along with a gentle floral lift. The profile is light in body with a rounded sweetness and a crisp lemon driven acidity that brings everything into focus.
